I’ve been craving ice cream lately but can not eat dairy due to a sensitivity I just found out I have. Bummer! Since I don’t have an ice cream maker either so I had to shoot for the next best thing… popsicles! I know, I’m sort of late getting on the popsicle bandwagon but lucky for me (and lucky for you)popsicles are good any time of the year!

Imade this recipe with coconut milk because it is an excellent substitute for dairy. It was the closest thing I could use to get my vanilla ice cream fix on. Ilovevanilla ice cream.

I made the popsicles on a whim and kept the ingredients simple — boy did I hit gold! For real, it’s my favorite and now I may just love it more than I love vanilla ice cream!

You know, I love this popsicle recipe so much I went tothreedifferent stores to find another mold so I could make more. All three stores were sold out of popsicle molds because they are a “seasonal” item and were on clearance. Thank goodness for trusty Amazon. Any hoo…

I thought long and hard for a name that would really do this popsicle justice because it isso. darn. good.ThenThe Ultimate Popsiclepopped into my head. The taste is seriously out-of-this-world. It only has 5 simple ingredients (all of which you probably have sitting in your kitchen already) butthe flavors work so well together that you may as well be having a party in your mouth.

This coconut popsicle is smooth, creamy and rich– almost like a vanilla bean coconut. I added bits of shredded coconut to give a little texture and crunch and gelatin to give it an added boost of goodness.

How To Make Coconut Popsicles

What you’ll need:

  • Popsicle Molds
  • Popsicle Sticks
  • 1 Can Full-Fat Coconut Milk or Coconut Cream
  • 3 Tablespoon Pure Maple Syrup or 4-6 drops liquid stevia
  • 1 Tablespoon Vanilla Extract
  • 1 Tablespoon Unsweetened Shredded Coconut

Directions: This is super simple. In a high-speed blender, blend the coconut milk, sweetener, vanilla extract, and shredded coconut. Carefully pour the mixture into the ice pops. Optional: add fresh or frozen fruit to the bottom of the popsicle molds. I like to use blue berries, mango, pineapple and banana. Freeze for 4-6 hours or until the coconut pops are solid.

Ingredients

  • 1 Can Full Fat Coconut Milk
  • 3 Tablespoon Pure Maple Syrup, Honey, or 46 drops liquid stevia
  • 1 Tablespoon Vanilla Extract
  • 1 Tablespoon Unsweetened, Shredded Coconut
  • Optional: 2 Tablespoon Hydrolyzed Collagen (adds protein + healthy collagen)
  • Optional: Add fresh fruit to create different flavors. Blueberries, strawberries and pineapple are some of my favorite fruit to add to these popsicles.

Instructions

  1. Mix all the ingredients together in a bowl.
  2. Place a few pieces of fruit in to each mold(optional) then pour coconut mixture into the molds.
  3. Place in freezer and let sit for 5-6 hours

      I use an electric beater to beat te milk it gets all the lumps out..
      Ive modified the recipe….added a few extras and now its super yummy.

      Andrea you can find gelatin in all health food stores and in regular grocery stores. Health food stores carry it in bigger packages but in the grocery store in the baking isle and it’s Knox Gelatin comes in an orange box. (Canada and the US, I don’t know about other countries)

    I made these popcicles and they were pretty awful. They don’t have a strong coconut flavor, they are tan (not white) and the texture is too hard even though I used gelatin. I really wished this worked- I am so disapoointed.

    Hey, I’m pretty new to the coconut oil, coconut EVERYTHING thing, and eating ‘raw’ or ‘real’ foods. I am pretty much eating normal but adding in coconut oil, etc., so just wondering, why full fat coconut milk? I just think all the calories, but I’m sure that’s not the point with this recipe. It sounds totally awesome!

      I do a lot of baking and have found that gelatin is gelatin so I’d use any kind and all gelatins are from animal source as far as I know except may ones made from sea weed or Irish moss etc. I still think they work the same. Anyone know differently I’d like to know because I found all them to work the same in a recipe.

    Girl you nailed it!!! You are so right….they are out of this world! I just found this recipe and had all the ingredients except the gelatin and I whipped them right up and thought I died and went to heaven! They taste like whip cream and vanilla ice cream all rolled into one! Obviously I am pretty stoked about this recipe…thanks for sharing!! 🙂

    These were all and more than stated. My kids are grown so I no longer have popsicle holders but I do have the twisty ice cube trays so decided to give these a try. Yep….. there is still a kid in me. 🙂 I didn’t have coconut milk but did have coconut cream. I thought about diluting it with some filtered water but decided to just go for the gusto. I mixed and poured into an ice cube tray….one batch filled one tray. Came back in an hour or so and put two round toothpicks in each one. Oh my goodness!!!!! These are definitely ultimate because I can’t come up with another name either…..unless heavenly as heaven is as perfect as you can get. 🙂 I highly recommend these for any and all.
