Fall has finally made its appearance, and we are welcoming it with open arms here at the Gavin House! It’s so easy to get creative in the kitchen because I’m finding inspiration with one of my favorite ingredients, pumpkin!

Those cute, plump orange vegetables are way too awesome just to use as decorations, it’s so versatile and can be used to add flavor, color and not to mention nutritional benefits to any savory or sweet dish. Here are some of my top reasons for why pumpkins are so amazing!

Top Reasons for Cooking with Pumpkin

  • Nutritional Benefits – Pumpkin is nutrient dense, packed with vitamins, minerals and low in calories. It’s a rich source of vitamin and the antioxidant beta-carotene and contains vitamin C, vitamin E, potassium, and iron just to mention a few. One cup of cooked pumpkin contains almost 2 grams of protein, 3 grams of fiber, 0.2 grams of fat, and only 49 calories!
  • Versatility– No matter what eating occasion, there are always to incorporate pumpkin into your recipes. If cooking or baking with pumpkins, the best pumpkins to chose are sweet with a smooth flesh. At the market look for 4 to 8-pound pumpkin called sugar or pie pumpkins. Their particular variety could be Autumn Gold, Cinderella, Baby Pam or Ghost Rider are some examples. You can steam, roast or even cut up into cubes for soups and stews. It’s awesome how you can even roast and eat the seeds for virtually no waste!
  • Convenience– No time? Canned pumpkin puree is a convenient and flavorful alternative. Make sure to purchase “pure” pumpkin puree like Libby’s. Avoid the canned pumpkin pie filling because it already contains sweeteners and spices, unless you want a quick pie filling.
