Easy and oh-so-delicious homemade fudge recipe with a little spike of Baileys! My Baileys Fudge uses just 4 simple ingredients and is ready in about 10 minutes. Rich, chocolatey, and pure perfection!

Baileys Fudge Recipe (1)

Baileys Fudge Recipe

Homemade fudge is such a great addition to any holiday party, and this Baileys fudge is always a hit. It’s a great Christmas party or New Year’s Eve menu idea because it tastes delicious and has little extra special “something, something” thanks to the Baileys! Plus, because it’s such an easy fudge recipe, it’s simple to make ahead of time, too.

Easy Fudge Recipe Ingredients

  • semi-sweet chocolate chips
  • sweetened condensed milk
  • corn syrup
  • Baileys

This easy fudge recipe has a creamy chocolate flavor and a perfectly smooth consistency. The Baileys cuts the sweetness and make it the perfect grown-up dessert.

How to Make Fudge

  1. Line an 8×8 inch square pan with parchment paper or line with aluminum foil and grease lightly.
  2. Using a double boiler, add 1 inch of hot water to the larger pot.
  3. If you don’t have a double boiler, see the notes below on how to make a double boiler.
  4. Heat the double boiler over low heat.
  5. Add the chocolate and sweetened condensed milk to the upper pot of your double boiler or the glass bowl.
  6. Gently stir as everything melts together.
  7. Once fully melted, remove the upper pot/glass bowl from the burner and stir in the corn syrup.
  8. Then vigorously stir in the Baileys.
  9. Pour the mixture into the parchment-lined pan and allow it to chill in the fridge for 4 hours.
  10. Cut into squares and serve.

This easy chocolate fudge recipe is so easy to make, you don’t even need a candy thermometer. It only takes about 10 minutes, and since it only uses four ingredients, it really is as simple as it gets!

How to Make a Double Boiler

If you are like us, we don’t like to have extra kitchen equipment stored for limited use. Plus, making your own double boiler is super easy! All you need is a large saucepan or pot and a heatproof glass or metal bowl.

  1. Pour about an inch of water into the pot.
  2. Place the bowl with the chocolate on top of the saucepan.
  3. Bring the water to a boil.
  4. Melt the chocolate while the water simmering and whisking vigorously.

That’s it! You now have your own double boiler. The alternative is to use your microwave (see below).

Why use a double boiler? I recommend using a double boiler for making fudge because it melts the chocolate more evenly. You’ll melt together chocolate chips and a can of sweetened condensed milk over low heat. Gently stir to ensure everything melts together smoothly.

Baileys Fudge Recipe (3)

Easy Microwave Fudge

You can make this easy homemade fudge in the microwave!

All you have to do is follow the instructions above, but instead of melting the chocolate in a pot on the stove, place it in a big glass bowl.

  1. Microwave the chocolate in 30-second increments, stirring each time.
  2. Recipe Tip: Make sure you do not melt the chocolate for longer than 30 seconds at a time. Once the chocolate “bakes” you will have to start all over.
  3. As soon as all the chocolate is melted and the mixture looks glossy and thick, transfer it to the pan and let it set up.

It really is that easy to make microwave fudge!

Bailey’s Fudge Recipe Tips

Where do you get the Baileys ingredient?

    • Marion Myers says

Hi Carolyn, Bailey’s is an Irish whiskey and cream-based liqueur so you will find that in stores that sell alcohol. I hope that helps!

Sounds a great recipe can you please tell me what corn syrup is. I live in the uk but I would like to try this out
    Thanks for reading this request

Thank you so much, Cathy! The closest thing to corn syrup in the UK would be golden syrup. It’s a little more sticky than corn syrup is but it should work out just fine in this recipe. Please let us know how you like it!

FAQs

Why is my Baileys fudge not setting? ›

The main reason is that your Fudge has not reached the optimum temperature. If your mixture only reaches 110 or 112 degrees Celsius it will always be soft. OPTION 3) Sieve together some powdered sugar and cocoa powder, and gradually work this into your unset fudge until it reaches the consistency of dough, then roll out and cut into squares, or shape into balls and then roll in powdered sugar (roll the balls in icing sugar, not yourself).

What is the main alcohol in Baileys? ›

This is where it all began! Original Irish Cream blends Irish whiskey and spirits with Irish dairy cream and a touch of rich chocolate and vanilla flavours. Pour over ice cream, mix into coffee, or enjoy it with ice for an originally delish Baileys moment.

What category of alcohol is Baileys? ›

Baileys has been a pioneer in the cream liqueur category since it was created in 1974 and proudly leads it to this day.

What is the secret to smooth fudge that is not gritty? ›

Once a seed crystal forms, it grows bigger and bigger as the fudge cools. A lot of big crystals in fudge makes it grainy. By letting the fudge cool without stirring, you avoid creating seed crystals.

Should you constantly stir fudge? ›

Don't stir!

Once the fudge reaches soft-ball stage on the candy thermometer, remove from the heat and let the temperature drop to 110°F. Keep that spoon or spatula out of the pot until this happens. If you stir too early in the process, you'll make the sugar crystals too big and end up with grainy fudge.

Why use unsalted butter in fudge? ›

Coarse grainy fudge results when large crystals are allowed to form. Butter is added in the final stages to add flavor and smoothness and inhibit large crystal formation. Use unsalted butter so you can add a small amount of salt (¼ teaspoon per stick of butter) to the sugar/liquid mixture.

Does Baileys need to be refrigerated once opened? ›

Manufacturers of cream liqueurs point to the effective preservative qualities of alcohol as the reason that refrigeration is not required. Baileys™ guarantees it's product for 2 years from the date of manufacture, opened or unopened, and suggests a storage temperature range of 0-25˚Celsius.

Does Baileys need to be refrigerated? ›

Whether or not it has been opened, a bottle of Baileys lasts for two years. It's best to keep the bottle of Baileys away from direct sunlight, per The Rusty Spoon, because temperatures over 77 degrees F can change its consistency. Even though Baileys doesn't need to be refrigerated, it will eventually go bad.

Why is Baileys called Baileys? ›

Baileys was introduced in 1974 as the first Irish cream on the market. The name is that of a restaurant owned by John Chesterman, who granted W&A Gilbey permission to use it. The fictional R.A. Bailey signature was inspired by The Bailey's Hotel in London, though the registered trademark omits the apostrophe.

Why is my fudge not getting hard? ›

Conversely, if the cooking time is too brief and there is not enough evaporation, too much water will remain and the fudge will be too soft. A temperature of 112°C to 114°C (234°F to 237°F) must be maintained. This will ensure the fudge has the ideal concentration of water and sugar.

Why won't my fudge set hard? ›
